Fishy (and salty) business

stephsaltcodThe Empress’ Sydney Morning Herald Good Living column this week is on salt cod – mmmmmmmm. She writes:

Since the advent of refrigeration and better transport, there’s no storage imperative to salt fish. But try telling that to the Portuguese, who have bacalhau so firmly entrenched in their culinary repertoire there’s no turning back. Soaking in water renders the stiff, dried fish soft, palatable and ready to be made into any of the 365 recipes the Portuguese have devised for it. But salt cod isn’t only the preserve of the Portuguese. The French are also fans of salt cod, which they call morue, and transform into warm puree with olive oil, garlic and moistened bread.

She samples salt cod French, Portuguese & Italian style.  And it sounds good.

Best kitchen-warming gift in the world

Last night we christened our finished new kitchen with dinner for eight [plus four kids, who spent the evening rushing between playing Abba records on the turntable in the studio and bashing away on musical instruments in the spare room, which is still piled almost to the ceiling – literally – with crap, outdoor furniture, washing machine etc. Two of them spent several hours perched precariously atop piles of junk, sitting in a washing basket playing the xylophone and maraccas while Senor made very sure their parents didn’t see.

dicky garlic1dicky garlicAnyway – our friend Ricardo, the Lunging Latino, showed up with the most beautiful present. This is one of the first bulbs of his home-grown organic garlic, grown in a pot in Balmain. It’s too beautiful, almost, to use. But of course we will. I’m going to save one of the little cloves to try to grow some myself.

stephSteph’s 3-of-a-kind restaurant column for Good Living in the Sydney Morning Herald is finally up online – go visit to get the clicks happening and make sure it stays that way.

After the sheer joy of our Lao trip to the west where we encountered the sticky rice heaven of Song Fang Khong, I look forward to our next suburban adventure with the Empress, which I believe is going to be a Filipino fiasco of some kind … can’t wait. 

Also, my thanks to her for pointing out yet another excellent-looking whole orange cake recipe here. And it’s a non-boiler, for you extra-idle types…
